Thiamine (Vitamin B1)
/ THY-uh-min /
A water-soluble B vitamin (B1) that the body converts into the coenzyme thiamine pyrophosphate, a required cofactor for the enzymes that turn carbohydrates into usable cellular energy, among them pyruvate dehydrogenase and transketolase. The body stores relatively little, so steady intake matters, and demand rises when carbohydrate metabolism is stressed, such as during refeeding after a prolonged fast. As a non-caloric micronutrient it does not break a fast.
