Cephalic Phase Insulin Release
/ seh-FAL-ik /
A small release of insulin triggered by the sight, smell, or taste of food before anything is digested. It is why an intensely sweet taste can produce a minor insulin response even with no calories. In practice the effect is small, and sweeteners like stevia and monk fruit are considered fasting-compatible.
